Sketchbook Tuesday :: sweet potatoes

We are big fans of the sweet potato in our house. They are very nutritious and one of the least allergenic foods. Our favorite way to eat sweet potatoes is as "fries", which are actually baked with a little olive oil drizzled over them and a few seasonings like garlic, parsley, and thyme. (on a lightly greased baking sheet at 475 for 20-25 minutes, stirring once during baking) So good.

I always like your food sketches. Drawing a recognizable potato is way harder than it looks, I've discovered.

I love sweet potato fries and have tried to make them several times. How do you keep them from sticking? The olive oil never seems to be enough!

Raena - I either spray the baking sheet with cooking spray or give it a light coat of olive oil. I also pull it out halfway through the baking time and stir them around, flipping them over as I go. Haven't had any sticking trouble so! We do love our sweet potato fries!
